Frank Vollkommer

Chef Frank Vollkommer is an Associate Instructor in the International Baking and Pastry Institute at Johnson & Wales University.

His industry experience includes several areas of foodservice, including culinary arts, baking and pastry, food ingredient systems, design consulting and entrepreneurship.  As an industry ambassador, Chef Vollkommer serves as an adviser for a number of ingredient brands and food corporations. Chef Vollkommer’s entrepreneurial accomplishments include the opening of a multiple location patisserie-café and a retail chocolate shop in upstate New York.  

Chef Vollkommer has held teaching appointments at The Culinary Institute of America and New England Culinary Institute, where he developed curriculum and taught classes. During his tenure at New England Culinary Institute & The Culinary Institute of America, Chef Vollkommer participated in the design, implementation and operation of two café facilities that functioned as capstone courses to undergraduate degree programs.

In 2005, Chef Vollkommer completed the testing process to earn the distinction of Certified Master Pastry Chef (CMPC) through the America Culinary Federation (ACF). Chef Vollkommer is one of only four chefs to pass the rigorous ten-day exam to join nine European Certified Master Pastry Chefs with the ACF.  Throughout Chef Vollkommer’s career he has participated in national and international food shows, competitions and events as a competitor, judge and organizer.
